The Rebel Owl company is a creative atmosphere located in Chicago, IL. Mer has worked in some of the best kitchens in Chicago for over 10 years. His resume includes work at Caffe Baci corp., Little Goat/Girl and the Goat of Boka group, Duseks, Veerasway, Quartino of Gibson’s group, and Tavern at the Park. He has spent time alongside distinguished Chef’s Steven Hubbell(Veerasway), Stephanie Izard(Little Goat diner), Jared Wentworth(Duseks), John Coletta(Quartino), and Gimi Hamili(Caffe Baci), and Chuy Reynoso(Tavern at the Park). Casa Indigo is Rebel Owl’s first restaurant located in the heart of the Pilsen neighborhood in Chicago on 18th St, set to open late August ’18.
